Salmon is a fish that most people find very difficult to cook. Forget that. It’s easy. All you need is an oven, a few small ingredients with 10-15 minutes to put them together and you can have the tastiest fish cooked in 35-40 minutes, with the tastiest flavors… Greek. Now, I am not Greek. And I am not a chef. But I love the Greek flavors and anything that has feta and kalamata olives in it, sounds great to me. So, here’s my easy recipe for a Greek-ish style salmon. I like to call it, Easy Greek-ish Style Salmon.
source 2 half pound Salmon filets (I prefer the skin on. Flavor, baby. Flavor.)
1/2 pound Asparagus
1/2 pound Crumbled feta cheese
1/3 cup Kalamata olives sliced
*Preheat your oven to 400 degrees.
*Get all of your ingredients together. (Chef’s call this, “Mise en place,” pronounced “meez en plahs.” It means, everything in it’s place. It’s French. And that makes me fancy for knowing it.)
*Wash your asparagus and cut the bottom tips off. Then, cut them in half and wash in a strainer. (want to know what to do with the rest of the asparagus you don’t use? Click here!)
*Lightly spray your pan with non-stick cooking spray.
*Lay the salmon filets into the pan (skin side down).
*Season the filets with Oregano and a bit of Salt-n-Pepa.
*Sprinkle the asparagus and olives on top and lightly oil.
*Once again, add some Salt-n-Pepa
*Add the feta crumbles on top
*Stick it in the oven and bake 35-40 minutes.
When the salmon is done, it should be easily flaked with a fork.
I like recipes that use a few simple ingredients, are easy to put together, and if the protein can be cooked with the vegetables, oh boy, I’m in heaven. This is one of those recipes. I like to have it with some rice (brown rice if you want to go really healthy).
When it’s done cooking, all you have to do is scoop a piece of salmon onto a plate with the toppings, and listen to how impressed your wife is at this awesome looking, great Greek-ish tasting piece of salmon.
