Fish Tacos with Honey Apple Slaw

Fish Tacos with Honey Apple Slaw
Sometimes I just want to eat something I know my kids will not touch. It’s nice to remember how little I once had to do.

1 serving of Awesome Sauce

I start with the slaw so it can marinate while I’m cooking the fish. Peel the apples and slice them, the onions, and the cabbage into strips. Put them in a bowl and add the honey, apple cider vinegar, lime juice, cilantro and a pinch of cayenne. If a pinch is not enough then do whatever makes you feel good, hotshot.

I generally suggest fresh Tilapia or Salmon with this, but as you can see I am using store-bought frozen. If you are using fresh, I suggest you put an oil of choice in a pan and sear (get a pan hot and cook for 10 seconds on each side) the fish and finish it in the oven at 375 degrees for 20 minutes. If you are using frozen, read the directions. I can’t do everything.

Using the same pan you used to sear the fish, spray it with cooking spray and brown the corn tortillas on each side. It prevents the tortilla from falling apart and just tastes better.

Enjoy and pretend that your children’s screams are the conversation of fellow patrons at a restaurant you can’t go to.
