1 lb of fish or sub Rock Em Sock Em Taco Meat
1 package of corn tortillas
1 serving of Awesome Sauce
1 Red onion, Red cabbage, and Red Apple
1 bunch of cilantro
1 tbsp of apple cider vinegar
1 tbsp honey
1 tbsp of lime juice
1 small block of cotija cheese (or feta)
1 pinch of cayenne
I start with the slaw so it can marinate while I’m cooking the fish. Peel the apples and slice them, the onions, and the cabbage into strips. Put them in a bowl and add the honey, apple cider vinegar, lime juice, cilantro and a pinch of cayenne. If a pinch is not enough then do whatever makes you feel good, hotshot.
I generally suggest fresh Tilapia or Salmon with this, but as you can see I am using store-bought frozen. If you are using fresh, I suggest you put an oil of choice in a pan and sear (get a pan hot and cook for 10 seconds on each side) the fish and finish it in the oven at 375 degrees for 20 minutes. If you are using frozen, read the directions. I can’t do everything.
Using the same pan you used to sear the fish, spray it with cooking spray and brown the corn tortillas on each side. It prevents the tortilla from falling apart and just tastes better.
Cut the fish in strips and place on top of the tortillas. Add the apple slaw, crumble the cotija cheese over the top, and dribble a bit of Awesome Sauce over the top. Enjoy and pretend that your children’s screams are the conversation of fellow patrons at a restaurant you can’t go to.
